The Baiting Hollow Farm Vineyard was founded by the Rubin family. Sam Rubin, the patriarch of the family, has been farming in New York State and other locations since after he returned from WW2. Even at eighty years old he still farms the land and tends the vines. The Rubins acquired the land that the estate now stands on in the '80s. Their tasting room opened in 2007. They also run a horse rescue shelter on the land.
