North fork field blend is ruby and garnet in the glass, solid to the rim. Each year the wine is a different blend depending on what is being researched. The 2007 vintage is composed of 44% Merlot, 25% Cabernet Sauvignon, 9% mixed whites, 5% Blaufrankisch, 5% Pinot Noir, 3% Cabernet Franc, 3% Petit Verdot, 3% Dornfelder, 1% Syrah, 1% Barbera and 1% Malbec and was aged on 19% new oak. Aromas are complex and primarily earth driven eucalyptus, mint, loam, thistle, green pepper, and licorice candy with currant and plum contrasts. Palate continues earth themes with cigar box, pencil shaving, white pepper, thistle and bell pepper. Medium to full bodied wine is adventurous and extremely unusual but shows good structures of pronounced acids and grippy tannins. Needs time in the cellar to bring everything tighter; should be best after 2014 and drink well for at least a decade. Finish gets big with anise and licorice candy with ripe black plum pedal tones. Way too big as an aperitif. Pair with grilled steaks, roast lamb with Greek black olive and oregano sauce, or prime rib.
